Monica Corrado

Monica Corrado, MA, CNC, CGP is a teaching chef, Certified Nutrition Consultant, and Certified GAPS Practitioner who is passionate about illuminating the connection between food and well-being. A member of the Honorary Board of the Weston A. Price Foundation since its inception, Monica is a dynamic teacher, speaker, consultant, and author who lives to share the tools, knowledge and inspiration to cook nourishing, traditional food.

Monica has been involved in the sustainable and local food revolution for more than twenty years, forming CSAs and connecting people to farmers and real food. Her organic catering company catered some of the first Weston A. Price Foundation annual Wise Traditions conferences. Monica turned her attention to teaching food as medicine throughout the US and internationally more than 13 years ago after 18 years in sustainable food sourcing and preparation, menu design and management. She taught traditional foods preparation as an adjunct professor in the Masters of Science in Nutrition and Integrated Health at Maryland University of Integrative Health in Columbia, MD for two years, after having developed the curriculum for the university. Locally, she was on the faculty of the Farm-to-Table Culinary Academy at Sunrise Ranch in Loveland, CO, and taught traditional foods techniques.

Over the past 10 years, Monica’s work has focused on the Gut-Brain connection and she is an authority on cooking to heal a leaky gut via the GAPS (Gut and Psychology Syndrome™) nutritional protocol. Dubbed “the GAPS Chef”, Monica teaches GAPS cooking in the GAPS Practitioner training with Dr. Natasha Campbell-McBride.

In an effort to reach as many people as possible with the healing potential of the GAPS Nutritional Protocol, Monica wrote the four part series on Cooking Techniques for the Gut and Psychology Syndrome™ Diet published by Selene River Press, including Meat Stock and Bone Broth, Culturing Dairy, Lacto-fermentation and Nuts and Seeds. She has had tremendous results in her private practice with those suffering from the disorders from leaky gut: Autism Spectrum, ADHD, failure to thrive, fertility and autoimmune disorders. She guides her clients through the GAPS diet and helps them add nutrient-dense foods to their diet.
